Cast Iron Woks Buying Guide
If you like Asian food, cast-iron pot is the best cooking tool. Mainly because of its shape and design, heat is dispersed throughout the large container. Traditional cast-iron pots are considered being the best in terms of durability and heat distribution uniformity.
What Are The Advantages Of Cast-Iron Woks?
1、 Cast-iron pot is made of gray iron melting and model casting. The heat transfer is slow and uniform, but the pot ring is thick, the grain is rough and easy to crack.
2、 Cast-iron pot has a characteristic. When the temperature of the fire exceeds 200℃, the cast-iron pot releases a certain amount of heat to keep the temperature of the food around 230℃, while the refined iron pot directly transfers the temperature of the fire to the food.
3、 For ordinary families, it is better to use a cast-iron pot. Because of the advantages of cast-iron pot, we make it of refined iron with fewer impurities. Therefore, the heat transfer is relatively uniform, and it is difficult to stick to the pot; Because of suitable materials, the temperature in the pot can reach higher; High grade, smooth surface, and easy cleaning.
4、 Compared with the ordinary so-called smokeless pot and non-stick pot, its unique uncoated design eliminates the harm of chemical coating and aluminum products to the human body and enables the whole family to enjoy healthy and delicious food without damaging the nutritional components of dishes.
5、 Iron is the basic element of cell formation. 72% of the iron in the human body exists in hemoglobin. Iron deficiency will cause anemia. The intake channels of iron elements in life are limited, and the iron elements that the human body can absorb can only be active.
6、 The heat transfer is uniform, and the heat is moderate. It is easy to combine with acidic substances in cooking, to increase the content of iron in food several times, to promote the rebirth of blood, and achieve the purpose of replenishing blood. A large amount of iron absorbed by the human body comes from the iron pot. The dishes fried in the iron pot contain iron elements, which are convenient for the human body to absorb, but only the cast-iron pot can integrate iron elements when cooking.
7、 Cooking vegetables in an iron pot can reduce the loss of vitamin C in vegetables.
Seasoning And Maintenance Of Cast-Iron Woks
Most cast-iron pots are pre-seasoned, but it is best seasoned before the first use.
1、 When you get the cast-iron pot, first add a little detergent with clean water, wash the pot inside and outside with a cleaning cloth, and then rinse the pot with clean water.
2、 Wipe the pot with kitchen paper, put it on the stove, and dry it over low heat.
3、 Prepare several pieces of fat pork (or edible oil), hold the fat pork in a clip, heat it over low heat, and wipe it to the edge of the pot. Be sure to wipe it in every corner repeatedly.
4、 Heat the lard slowly and bring it out. Tilt the pan so that the oil reaches all areas. We should repeat this action several times, which should last about 20 minutes to ensure that it has soaked all the inner walls of the pot in oil, to form a film and prevent oxidation.
5、 Pour out the oil in the pot, leave a piece of fat pork, and wipe the outside of the pot again and again.
6、 It’s best to keep the pot cool and scrub it again and again with warm water after it is completely cooled.
7、 Repeat the above steps 2-6 for 3 times. After wiping the oil for the last time, leave it in the pot for one night and let the pot soak in oil for one night.
8、 To prevent rusting, clean with sterile cloth and apply seasoning before storage. Avoid storing in unusually wet places, as this will increase the possibility of rust.
How To Buy A Cast-Iron Pot
Pre Seasoning
Every good cast-iron pot is seasoned in advance. This means that it has a layer of fat and oil, which makes the surface of the pan naturally nonstick, so it won’t stick together during cooking. The more cast-iron pots are used, the better the taste. The more often you use your cast-iron pot, the deeper the seasoning, and you can handle more calories without harm.
Weight
Cast-iron pans are heavy, which is why many people don’t like them, but it also makes them very durable and provides the stability needed to fry or cook your favorite food. The thickness of cast iron determines the heat that can enter the pot, so the thicker the better.
Size
For cast-iron pots, size is probably one of the most important considerations. Many people prefer a smaller wok, which is easier to store in a closet or even on a chain on the shelf. When choosing a suitable plan for the family, the size of the pan is the primary consideration. Most of the pans on the list are 14 inches, larger than the average size of 12 inches or 13 inches.
Shape
Traditionally, cast-iron pots in China are round-bottomed, so we can use them on any heat source without additional equipment. If you want to cook on an ordinary stove, buy a cast-iron pot with handles on both sides. Cast-iron pans usually have a flat bottom, which makes them easier to cook in a typical kitchen, whether gasoline, electricity, or induction.
Heat Source
They widely used cast-iron pots as heat sources. You can cook Asian food on top of an ordinary gas stove, electric stove, or even induction cooker. Look at our recipes and you find that some delicious dishes are cooked traditionally.
Cover
All cast-iron pans must have covers. Although it is not boiling when cooking, it is hotter than any other material used in the kitchen. The lid helps keep your favorite food warm and ensures that they cook evenly it in all directions at the same time. They also allow you to store food after it is ready, or simply prepare ingredients before you need them again.
Thickness
If the pot is thick, it takes more time to heat. However, once heated, a thick pan will remain warm for longer and distributed more evenly. However, if the pot is too thick, it is difficult to balance.
